February: Grandma's Cheese-Soup
Colourful costumes and deep-fried treats are booming on carnival. Carnival revellers can also satisfy their culinary desires with warming dishes. Try out our hearty Cheese Soup like Grandma makes it - very tasty!
For the Soup:
80 g onions
15 g garlic
1 bunch spring onions
450 g Mountain-Cheese (e.g. Greyerzer)
2 tbsp plain flour
40 g butter
200 ml cream
250 ml buttermilk
280 ml white wine
800 ml vegetable stock
2 Brezeln (from day before)
salt, black pepper
Peel onions and garlic, chop both finely; set aside. Thoroughly wash the spring onions, drain and chop finely. Set aside. Grate the cheese finely and set aside. Measure flour and butter; set aside. Measure cream and buttermilk and set aside in one jar. Measure wine and stock; set aside. Cut Brezels into slices and set aside. Set aside the spices.
Melt butter in a large saucepan, add onion and garlic and sauté for 3 min. Toss in spring onions and sauté for another 2 min. Stir in flour and cook gently for 2 min, then gradually stir in wine and stock. Bring to a boil. Leave to simmer for 3 min. Add the cheese and leave to melt - stirring occasionally. Stir in buttermilk and cream until soup is smooth. Leave to simmer for 3 min. Adjust seasoning with salt, pepper and nutmeg. Ladle soup into warmed bowls, garnish wit Brezels and serve immediately.
If necessary, use an immersion blender to purée the soup.
