Deer Ragout with Chanterelles, Bread dumplings and Pear Compote

Summer is slowly fading and that means we enjoy the last summer delights, but we are also looking forward to the first culinary autumn messengers. This venison ragout tastes particularly delicious in September, served with chanterelles and bread dumplings.


Serves 4

For the Deer Ragout:
1000 g deer ragout (cut into 5 x 5 cm pieces)
500 g onions
100 g carrots
250 ml red wine
30 g tomato paste
150 g lingonberries (jar)
15 juniper berries
4 bay leaves
2 sprigs of rosemary
1 tsp green pepper (in brine)
1 small bunch of thyme
300 ml game stock
30 g all purpose flour
60 g clarified butter

Step One:

Peel and wash the onions. Cut them into coarse cubes; set aside. Peel carrots, cut into medium-sized cubes and provide. Measure red wine and provide like tomato paste and lingonberries. Put juniper berries, bay leaves, rosemary, green pepper and thyme together in a spice bag. Measure and set aside the stock, flour and clarified butter.


Step Two:

Place a large pot on the cooking zone and add the clarified butter. Heat and fry the venison on all sides for about 10 minutes. Add the onion cubes and fry over high heat for 12 minutes. Stir occasionally. Add the carrots and sauté for 2 minutes. Deglaze with the red wine and boil over high heat for about 3 minutes. Stir in the tomato paste and fry for about 3 minutes. Sprinkle in flour, mix well and cook at medium heat for 3 minutes. Add the game stock, stir and simmer for 5 minutes. Add spices and herbs and simmer at medium heat for 30 minutes. Stir in the lingonberries 5 minutes before the end of cooking. After 30 minutes test if the ragout is tender. If not, continue cooking. Season the venison ragout with salt and pepper to taste.
Arrange on plates and serve with bread dumplings, fried chanterelles and compote.
